Very High Protein Chilli with Protein Rice

Ingredients
- 250g Lean Steak Mince
- 2 Carrots, sliced.
- 100g Onion, diced.
- 2 Teaspoons Chilli Powder
- 1 Teaspoon Nutmeg Powder
- 100g Protein Rice
- Salt & Pepper
Instructions
- Brown the mince as you break it down with the end of a wooden spoon or fork, over a low heat, to stop it forming clumps.
- Add in the onion, chilli and nutmeg powder.
- Add a half litre of water, the carrots and let the mince simmer for around 20 minutes, or until the vegetables are fully cooked.
- Towards the end of the mince cooking time, put your rice on to cook for around 9 minutes. I added a teaspoon of chilli powder to the water as my rice was cooking. The texture of high protein rice is very different to rice you might be used to, but it’s tasty all the same.
- Thicken mince if needed, with a little cornflour mixed with water to a smooth paste, and let simmer for five minutes.
- Serve hot and enjoy.
