For this, we used high protein rice from MYPROTEIN, which boasts 172 calories and 30g per 50g serving of rice.  This high protein rice looks different from regular rice, but retains a similar taste and texture.

Very High Protein Chilli with Protein Rice
Recipe Type: High Protein
Author: Lesley
Prep time: 10 mins
Cook time: 25 mins
Total time: 35 mins
Serves: 2
Ingredients
  • 250g Lean Steak Mince
  • 2 Carrots, sliced.
  • 100g Onion, diced.
  • 2 Teaspoons Chilli Powder
  • 1 Teaspoon Nutmeg Powder
  • 100g Protein Rice
  • Salt & Pepper
Instructions
  1. Brown the mince as you break it down with the end of a wooden spoon or fork, over a low heat, to stop it forming clumps.
  2. Add in the onion, chilli and nutmeg powder.
  3. Add a half litre of water, the carrots and let the mince simmer for around 20 minutes, or until the vegetables are fully cooked.
  4. Towards the end of the mince cooking time, put your rice on to cook for around 9 minutes. I added a teaspoon of chilli powder to the water as my rice was cooking. The texture of high protein rice is very different to rice you might be used to, but it’s tasty all the same.
  5. Thicken mince if needed, with a little cornflour mixed with water to a smooth paste, and let simmer for five minutes.
  6. Serve hot and enjoy.
